Fried eggplants garnished with vegetables

Ingredients:

4 eggplants sliced along
3 carrots
2 italian peppers
2 green bell peppers
2 fresh tomatoes
1 onion
1 bunch cilantro
Salt, olive oil







1. Salt sliced eggplants and lieve them for 10-15 min, then squeeze them. This step reduces the bitterness of the eggplants and it is an optional step. Fresh eggplants could be fried straight after salting.
2. Fry eggplants slice by slice in olive oil.


3. While frying eggplants, in the separate pan fry chopped onion in olive oil.



4.Meanwhile shred carrots, slice all peppers and tomatoes.
5. When onions start getting golden, add carrots, peppers and tomatoes from step 4, mix well and cook on low for 15 min.




6. Serve with fried eggplants sprinkled with fresh cilantro.
