Eggplant caviar



Ingredients:

4 eggplants
1 cup walnuts
1 bunch cilantro
5 cloves of garlic
half teaspoon of salt

1. Place eggplants on the baking sheet, make 1-2 holes with knife in each and bake them for 1 and a half hours at 350 degrees F. They will become smaller and skins may even be slightly burnt, but that's ok.


2. Let them cool down and peal off the outside skins.



3. Into the bowl, spoon out the insides of the eggplants.

4. Run knife through them, cutting them as finely as you like.


5. In the food processor mix walnuts, cilantro, garlic and salt.




5. Add to eggplants, mix well and serve warn or cold.
