3 eggplants
1 cup Real mayonnaise
1 cup sour cream
1 tea spoon red sweet paprika
1 tea spoon curry powder
1 tea spoon cilantro seed powder
3 cloves of garlic (optional)
salt, olive oil.
1. Wash, cut and peal the sides of the eggplants as it is shown on the picture.
2. Slice and salt them (notice that the sides have skin). Heat olive oil in pan and fry eggplant.
3. Meanwhile prepare the sauce. In separate bowl, mix mayonnaise, sour cream, curry, cilantro and paprika powders. Add pressed garlic and mix again.
4. Transfer fried eggplants into the serving dish (eggplant will be very soft, reduced in size and become a golden color) and add spoonfull of sauce on each slice. Spread the sauce and repeat. You will end up with layers of eggplant and sauce.

Serve room temperature or cold.
